I made this taco casserole for a dinner party with my friends and it was a major hit! Sweet potato and black bean combo wins again, SO easy to make and the perfect taco filling!
Ingredients:
3 sweet potatoes
2 cans of black beans
1 can Rotel diced tomatoes & chilies
1 green bell pepper
1 red bell pepper
1 yellow onion
1/2 packet taco seasoning
Olive oil
Optional: corn tortillas, chips, salsa, avocado, other toppings.
Instructions:
1. Preheat oven to 400 degrees and bake sweet potatoes for 30 minutes.
2. While sweet potatoes are baking, sautee peppers and onions with olive oil.
3. Drain black beans and diced tomatoes.
4. Combine peppers, onions, beans, tomatoes, and taco seasoning in a large bowl.
5. Dice sweet potatoes and place in bottom of a 9 by 13 greased dish.
6. Scoop mixture on top of the sweet potatoes and add a layer of shredded cheese.
7. Bake in oven for 20 minutes.
8. Let sit for 5 minutes and then serve plain or with chips/ tortillas.
