Ingredients:
1 Bell Pepper
1/4 cup Quinoa
1/2 cup water (can use vegetable or chicken stock)
1/2 cup Black Beans
1/4 cup Shredded Cheddar
(Optional: 1./4 cup corn)
Instructions:
1. Preheat oven to 350 degrees
2. Prepare quinoa (1 part quinoa to 2 parts water). Place quinoa and water in a pot and bring to a boil. Once boiling, reduce to simmer and let cook for 15 minutes. The water should be absorbed, try fluffing with a fork to see if it needs more time.
3. Mix quinoa with black beans and half of the shredded cheddar
4. Cut bell pepper in half, scoop out the insides, and fill with quinoa mix
5. Add the rest of the shredded cheddar on top and bake for approximately 20 minutes.
