Below are instructions for 1 serving- could easily be made for a large group!
Ingredients:
1 small butternut squash
3 large kale leaves, ripped into pieces and stems removed
4 oz ground turkey
1/4 box of whole wheat spaghetti
1/4 cup yellow onion, chopped
1/2 tsp minced garlic
Olive Oil
Salt & Pepper
Instructions:
1. Preheat oven to 400 degrees.
2. Peel, scoop out seeds, and chop butternut squash into chunks.
3. Toss squash with olive oil and some salt & pepper and place on cookie sheet. Roast in oven for approximately 35 minutes.
4. When the squash is about half way done, brown your ground turkey with some olive oil, salt & pepper in a pan on the stove. Place in bowl on the side when finished.
5. Bring a pot of water to a boil and cook spaghetti (7 minutes).
6. Remove turkey from the pan and add olive oil, 1/2 tsp minced garlic, and onion. When onions are slightly browned, add kale leaves and let wilt.
7. Remove squash from oven and drain pasta.
8. Add squash and turkey to kale. Let warm together for approximately 2 minutes.
9. Add spaghetti to pan and mix together. Let sit for a couple minutes before serving.
