Recipe Adapted from The Kitchn

Ingredients
2 cans black beans, drained and rinsed
1 can whole-kernel corn (or 3 ears fresh corn)
1 cucumber, diced
2 to 3 limes, juiced
1/2 cup chopped celery or green onions
1 to 2 cups crumbled feta
1/3 cup red wine vinegar
Sea salt, cracked black pepper, and cumin to taste
Instructions
1. Combine black beans, corn, cucumber, celery, feta in a bowl and mix together
2. Add lime and vinegar to taste, do the same with the salt, pepper, and cumin
3. Let chill in fridge for at least one hour before serving
Eat plain, serve over lettuce as a salad, fill your turkey wrap, or use as a salsa with chips or tacos!
