WOW. If you haven't tried a recipe yet and want to, this one is bowl-licking good. I made this "raw" but you could cook your noodles too!
Ingredients:
1 zucchini
2 ears of corn
Handful of cherry tomatoes
1/2 avocado
2 tbsp Olive Oil
3 tbsp water
1 tsp Lime Juice
1/4 tsp Salt
1/4 tsp minced garlic
Pepper
Instructions:
1. Spiralize zucchini into a large bowl.
2. Slice cherry tomatoes in half and cut ear off corn
**For everyone in a dorm room- microwaving corn is possible! Cook in microwave for approximately 4 minutes in the husk. Cut off bottom and then peel away husk.
3. In a food processor/ blender- add avocado, olive oil, water, lime juice, garlic, salt, and pepper. You can adjust water/ olive oil on how creamy you want it. Blend until smooth.
4. Pour avocado sauce over vegetables and enjoy!
