I'll be honest that I made this up as I went along but if sweet potatoes were involved I knew it would be tasty no matter what it looked like… Also calling this "bread" but its more like baked oatmeal…
Ingredients:
1 medium sweet potato
3/4 cup rolled oats
1/4 cup almond milk
1 tsp each of cinnamon, nutmeg, ginger (all ground)
1 tsp melted coconut oil
1 tsp baking powder
1 tsp baking soda
1 tbsp pecans (plus more to top)
Directions:
1. Preheat oven to 400 degrees and bake sweet potato for one hour.
2. Remove skin from potato and mash in a bowl. Turn oven down to 350 degrees.
3. Add milk, coconut oil. Follow with all the spices and baking soda/ powder.
4. Fold in rolled oats. Mix in pecans
5. Spread mixture into loaf pan (you could also make muffins)
6. Bake for approximately 20 minutes.
7. Let cool and then remove from pan and enjoy!
