Ingredients:
1 Sweet Potato
1 Egg
Optional Filling: Spinach, Onion, Cheese, Tomato, etc
Salt & Pepper
Instructions:
1. Preheat oven to 375 degrees.
2. Wash potato, pierce a couple holes, and then put in the oven for 45 minutes.
3. Remove Potato from oven and slice off the top. Use a fork to soften the insides and create a basin shape. Lightly salt & pepper.
4. Place any filling inside (you can also keep it plain)
5. Crack egg into potato. Lightly salt & pepper.
6. Put back into the oven for approximately 14 minutes (adjust based on how well you want your egg to be cooked)
7. Add any extra toppings (hot sauce, avocado, salsa, etc) and enjoy!
