Ingredients:
1 sugar pumpkin (about 4 inches in diameter)
1/4 cup quinoa
1/2 cup water
2 tbsp. onion, diced
1/2 cup broccoli
1/2 cup brussel sprouts
1 handful of spinach
2 tbsp. feta
Coconut Oil
Salt & Pepper
Instructions.
1. Preheat the oven to 350 degrees.
2. Bring 1/2 cup water to a boil to prepare quinoa (make sure to rinse first). Reduce heat and let simmer. Cook for about 15 minutes. Fluff with a form when all water is absorbed.
3. Scoop out the seeds and gunk from the inside of the pumpkin. Brush with coconut oil (or olive oil) and poke the inside and outside with a fork. Season with some salt and pepper.
4. Put pumpkin in the oven, top side down with some water in a glass baking dish, and let cook for 30 minutes.
5. While the pumpkin is cooking, but your broccoli and brussel sprouts in the oven to roast (coat with coconut oil, salt, pepper). Roast for 25 minutes.
6. Take out your veggies and combine with quinoa, handful of spinach, and feta.
7. Fill pumpkin with filling and put back into the oven for 30 minutes.
