Recipe Adapted from Oh She Glows (4 Servings)

Ingredients
1 cup Quinoa
2 cups Water
1 bunch Asparagus, cut into pieces
1 pint Strawberries
1 cup Peas (fresh or frozen)
Olive Oil
Garlic
Lemon
Sea Salt
Instructions
1. Prepare quinoa by rinsing. Place quinoa and water (1 part quinoa to 2 parts water) in a pot and bring to a boil. Once boiling, reduce to simmer and let cook for 15 minutes. The water should be absorbed, try fluffing with a fork to see if it needs more time.
2. In a sauce pan, add olive oil and garlic. Add in asparagus and cook until tender, about 5 to 10 minutes.
3. Add in peas and strawberries for a few minutes to heat and then remove from burner.
4. Whisk dressing (2 tbsp olive oil, 3 tbsp lemon juice, sea salt)
5. Add quinoa and dressing to vegetable pan and mix all together.
