This makes one LARGE bowl or you could make two smaller bowls.
Ingredients:
3/4 cups split peas
2.5 cups vegetable broth
1 tsp. minced garlic
two celery stalks, sliced
1/4 cup diced yellow onion
1 small sweet potato, diced
Salt & Pepper, to taste
Instructions:
Place all ingredients in slow cooker and cook on high for four hours or low for AT LEAST six. I found that it took a while to get the "mushy" consistency. Stir occasionally.
OR
Bring all ingredients to a boil on the stove and then let cook on low for about two hours. Stir occasionally.
