There are so much more to quesadillas than only cheese- veggies and beans are much more delicious and nutritious!
Ingredients:
2 whole wheat tortillas
2 handfuls of baby spinach
1/4 cup sliced cremini mushrooms
1/2 cup black beans
1/4 cup shredded Monterey Jack cheese
Olive Oil
Toppings: plain greek yogurt, avocado, salsa
Instructions:
1. Heat 1/2 tspn. olive oil in a non-stick pan at medium high heat.
2. Add mushrooms. Stir occasionally.
3. When mushrooms appear to be light brown (about 3 minutes) , add spinach and let wilt. Then add black beans and let cook for about 2 minutes to soften.
4. Remove from pan and put to the side.
5. Lay your tortillas on a flat service. Divide mixture onto half of each tortilla. Sprinkle with the shredded cheese and then fold in half (I like doing it this way rather than stacking them because it keeps the filling inside better).
6. Reheat skillet and cook tortilla one at a time (use nonstick spray/ olive oil/ butter), about 3 minutes on each side or until cheese has melted.
7. Slice into triangles and serve with plain greek yogurt, avocado slices, and salsa!
