I grew up with my mom making more of a traditional recipe (ground beef, corn, mashed potatoes) but here I've put my own spin on it! Nothing like a bowl of comfort food when you miss home.
Ingredients:
Layer One: Meat
4 oz. Ground turkey
1/2 small hello onion, chopped
Cumin, Salt, Pepper
Olive Oil
Layer Two: Veggies
1 cup frozen peas (you could use mixed veggies too!)
Layer Three:
1 small butternut squash
Salt & Pepper
Instructions:
1. Preheat oven to 375 degrees.
2. Cut squash in half and scoop out seeds. Drizzle with olive oil, salt, and pepper. Place facedown in a clear dish and add about 1/4 inch of water. Put in the oven for 40 minutes (this is approximate dependent on the size of your squash).
3. While the squash is in the oven, add olive oil and onions to a large pan. Once they are soft (about 3 minutes), add your ground turkey. Season with cumin, salt and pepper.
4. Microwave steamer bag of peas.
5. When turkey is browned, remove meat and onions from pan to get rid of any excess grease.
6. You'll know the squash is cooked when it is soft. Let cool for a few minutes and then use a spoon to scoop out the insides into a bowl and mash together.
7. In a oven safe ramekin (personal sized dish), add your layers (turkey, peas, squash).
8. Put back into the oven to bake for approximately 20 minutes.
9. Let sit for 5 minutes and then enjoy!
This makes one serving but you can always make in larger quantities!
