Ingredients:
Eggplant
Bell pepper
Zucchini
Tomato
Onion
Garlic
Olive Oil
Quinoa
Water
Instructions
1. Prepare quinoa (1 part quinoa to 2 parts water). Rinse quinoa. Mix with water in a pot and bring to a boil. Once boiling, reduce to simmer and let cook for 15 minutes. The water should be absorbed, try fluffing with a fork to see if it needs more time.
2. Dice all of your vegetables
3. Add olive oil and garlic to a sauce pan. Add eggplant.
4. Add in pepper, onion, and zucchini. Add tomatoes last.
5. Once vegetables are all soft, add to quinoa bowl.
(For a saucier consistency, add tomato sauce to the vegetables)
