I ditched the sub roll for a creamy bed of polenta for my sausage & peppers! Super EASY when you buy already cooked sausage- I recommend al fresco chicken sausage.
Ingredients:
1/4 cup polenta corn grits
3/4 cup water
1 or 2 chicken sausages
1/2 cup tomato sauce
1/2 bell pepper, sliced
1/4 medium onion, sliced
Instructions:
1. Preheat oven to 350 degrees on Broil. Bring 3/4 cup of water to a boil on the stove.
2. Slice onion and pepper. Sautee on stove top with a little bit of olive oil for approximately 3 minutes until soft.
3. Pour 1/2 cup sauce into the bottom of a glass baking dish. Layer onions and peppers on top.
4. Place sausages on top of the veggies and sauce. Put in the oven for 10 minutes.
5. When water is at a boil- reduce heat to low and pour in the grits. Let cook for about 8 minutes (or until all water is absorbed) while stirring occasionally. Mix in some shredded parmesan if desired.
6. Pour grits onto plate. Remove sausage & veggies from oven and spoon on top of grits.
I'm not a heavy sauce person but feel free to add more if desired- you could also top with parmesan cheese or red pepper flakes!
