Ingredients:
Meat
4 lb Pork Shoulder
3 tsp salt
1/2 cup water
Slaw
1 bag broccoli slaw
2 tbsp plain greek yogurt
2 tbsp BBQ sauce
Salt & Pepper
Buns
1 Sweet Potato
Olive Oil
Salt & Pepper
(could also use slider rolls or lettuce wraps!)
Instructions:
1. Trim any access fat off the pork shoulder and place in slow cooker.
2. Pat salt evenly across the meat Pour water in base of slow cooker.
3. Let cook on low for about 10 hours.
4. Preheat oven to 400 degrees. Slice sweet potato into thin rounds, toss with OO/ Salt/ Pepper and place on a baking sheet. Bake for 30 minutes (flip half way through).
5. Mix all the slaw ingredients together minus the bag of prepackaged slaw. Once you have the dressing you can pour that on top of the slaw and mix together.
6. When meat is done remove from slow cooker and use two forks to shred the meat into strands. This should be very easy if it is fully cooked.
7. Assemble sliders (sweet potato, pulled pork, slaw, sweet potato)
