Ingredients:
1 zucchini, spiralized (use a cheese grater if you don't have a spiralizer!)
1 green Bell pepper, sliced
1 yellow pepper, sliced
1/2 cup sliced baby carrots
Olive Oil
Optional: Chicken or tofu
Peanut Sauce
2 tbsp peanut or almond butter
2 tbsp sesame oil
1/2 tbsp lime juice
1/4 tsp minced garlic
Red pepper flakes
Instructions:
1. Stir fry all of your vegetables in a pan with olive oil until tender
2. In a separate bowl, mix all of your ingredients together for the peanut sauce.
3. Remove noodles and place into a bowl, add cooked chicken/ tofu if wanted
4. Top dish with peanut sauce and red pepper flakes (sesame seeds, cilantro, and green onions are also good on top)
