Ingredients:
Quinoa
Water
Tomato
Cucumber
Bell Pepper
Red Onion
Feta
Olive Oil
Red Wine Vinegar
Instructions
1. Prepare quinoa (1 part quinoa to 2 parts water). Place quinoa and water in a pot and bring to a boil. Once boiling, reduce to simmer and let cook for 15 minutes. The water should be absorbed, try fluffing with a fork to see if it needs more time.
2. Dice tomato, cucumber, onion, and pepper and add to quinoa
3. Mix 1 tbsp olive oil, tbsp red wine vinegar, 1/2 lemon juice together in a bowl
4. Add dressing and feta to quinoa
