Ingredients:
Fish
1 cod fillet (about 4-6 oz)
1 tbsp pecans
1 tbsp olive oil
1/2 tsp thyme
1 tsp shredded parmesean
Salt & Peper
Chips
1 bunch carrots, peeled
1 bunch parsnips, peeled & cut into long strips
Olive oil
Salt & Pepper, to taste
Instructions:
1. Preheat oven to 400 degrees.
2. Prepare carrots and parsnips. Toss with OO, Salt, pepper and place on baking sheet.
3. Put in oven for approximately 40 minutes.
4. While the veggies are in the oven, mix all the fish ingredients together except for the fillet.
5. Drizzle dish with OO and place fillet on it. Spread mixed topping on top. Bake in oven for approximately 10-12 minutes. (fish will flake with a fork when cooked through)
