Perfect for chips, tacos, salads, or wraps!
Ingredients:
3 ears of corn (you could used canned or frozen)
1 green bell pepper, diced
1 tomato, diced
1/2 red onion, diced
2 tbsp lime juice
1/4 tsp cumin
Salt & Pepper, to taste
Optional: jalepenos or chilies
Instructions:
1. Combine all ingredients in a bowl.
2. Let sit for at least 20 minutes before serving.
