Ingredients:
1 Eggplant
Cheery tomatoes (or tomato sauce)
Basil or Spinach
Mozzarella (shredded or sliced)
Instructions:
1. Preheat oven to 425 degrees
2. Slice eggplant into disks and place on cookie sheet
3. Bake eggplant for 20 minutes
4. Layer tomatoes, mozz, and basil onto the epplant
5. Place back in oven and broil for approximately 4 minutes or until cheese is melted
