Ingredients:
Salad
1/4 cup barley
3/4 cup water
2 celery stalks, chopped
1/4 cup carrots, chopped
1 tbsp raisins
1 tbsp slivered almonds
1 tsp curry powder
Dressing
1 tbsp hummus
1 tsp curry powder
splash of olive oil
splash of apple cider vinegar
pepper
Directions:
1. Prepare barley by putting water and barley in a pot. Bring to a boil and then reduce to low and let cook for approximately 25- 30 minutes.
2. Chop your veggies
3. Add curry powder to barley on stove when there is about 10 minutes left.
4. Mix all the ingredients together to make the dressing (mine was pretty thick but you could add more oil and vinegar if desired)
5. Once barley is done remove from stove and mix with all ingredients in a separate bowl.
