Ingredients:
1/2 cup quinoa
1 chicken breast
1/4 cup buffalo sauce (adjust to how hot you like it)
3 cups broccoli ( I used a frozen steamer bag)
Handful of spinach
Tomato, diced
Blue Cheese Crumbles
Instructions:
Option One:
1. Prepare quinoa by rinsing in a strainer. Place quinoa and water in a pot and bring to a boil (1 part quinoa to 2 parts water). Once boiling, reduce to simmer and let cook for 15 minutes. The water should be absorbed, try fluffing with a fork to see if it needs more time.
2. Prepare chicken by baking in the over for about 18 minutes at 375 degrees.
3. Shred chicken with a fork in a bowl and add buffalo sauce.
4. In a large bowl, mix the quinoa, chicken, and broccoli. Stir to combine.
5. Top with tomato, blue cheese, and more hot sauce before eating (optional).
Option Two:
1. Put chicken breast, quinoa, water, and hot sauce in crockpot on high for 2 hours.
2. Mix with spinach, broccoli, tomato, and blue cheese.
You could also add carrots, celery, shredded cheddar. I created two lunch salads with this recipe.
