You all know how much I LOVE oats & this carrot cake version didnt disappoint!
Ingredients:
1/2 cup rolled oats
1/2 tsp chia seeds
3/4 cup almond milk
2 baby carrots, shredded
1 tbsp. unsweetened shredded coconut
1 tbsp. chopped walnuts
1/2 tsp. vanilla
1 /2 tsp. cinnamon
2 tsp. pure maple syrup
Instructions:
1. Combine all ingredients in a container than can be sealed well (I recommend a mason jar) and stir/ shake to combine.
2. Refrigerate overnight
3. In the morning top with more walnuts & coconut- enjoy!
