In my mind, homemade is almost ALWAYS healthier. I found this recipe on POPsugar and had to give it a try. There's so much more to food than numbers; these have a similar calorie count to regular Almond Joys, its the INGREDIENTS that make all the difference.
Ingredients:
1 1/2 cups shredded unsweetened coconut
6 dates
1 teaspoon pure vanilla extract
15 roasted salted almonds (optional)
1/2 cup dark chocolate chips
Instructions:
1. Combine dates and coconut in a food processor until slightly sticky, about three minutes.
2. Scoop out the mixture in tablespoons size servings and use hands to form dome shapes. Place on a cookie sheet.
3. Optional to press one almond into each dome
4. Place in freezer for approximately 20 minutes.
5. Melt chocolate either in microwave or using a double broiler on the stop (ideal but microwave is easier..)
6. Take coconut mounds out of freezer. Using a spoon cover in chocolate. (No need to completely dunk into the chocolate, this makes a mess)
7. Put back into the freezer for another 20 minutes.
Keep in an air tight container in the fridge!
