Ingredients:
1 acorn squash
4 oz ground turkey
2 handfuls spinach
1 tablespoon dried cranberries
1/4 tsp minced garlic
Olive Oil
Water
Instructions:
1. Preheat oven to 375 degrees.
2. Cut your acorn squash in half and scoop out the seeds.
3. Fill a glass baking dish with 1/2 an inch of water and place squash face down. Bake squash for 40 minutes.
4. In a pan on the stove, sauté ground turkey with some olive oil and minced garlic.
5. Drain meat so that you remove any extra liquid.
6. Add spinach to pan. Stir turkey back in and add cranberries.
7. Scoop filling into squash. Place back into the oven for approximately 15 minutes.
